From a washing station run by Israel Degfa, owner of Kerchanshe Trading PLC, cherries from various smallholders in the Uraga area of West Guji are collected and processed. Naturally organic, the farmers grow a mixture of Ethiopian Heirloom varietals in their small garden plots. This year's Uraga lot was dried under tarps during midday in order to slow down the drying process to better stabilize the internal moisture in the coffee.
