This is our first batch in anaerobic. This coffee has a pleasant sourness, a bit like a sour beer. This is the first taste that comes to mind when we taste it, currant, cherry. Then, we feel a vegetal sugar aroma, not caramelized at all. At the end of sip, it is rather the carambola which surprises us with its tropical side.
Edilson Mamian is a coffee producer who, along with his family, has dedicated his entire life to growing specialty coffees in the heart of Huila, a region that produces specialty coffees. He is learning new techniques of coffee processing, making it his life project.

After being washed, these beans were fermented for 60 hours without the presence of oxygen (anaerobic). During anaerobic fermentation, the coffee is placed in a closed tank with a valve to release carbon dioxide. This gives the producer a little more control over the chemical reactions taking place.
It is a good coffee to make a surprising espresso. We like it with a little milk, like a cappuccino. Super interesting in filter.
