Toarco is a coffee with a bold profile and no fruity taste. Its aftertaste of sugar and fresh tobacco is just as interesting as its creamy texture.
We rarely have the opportunity to roast a coffee with a herbaceous side, this is your chance to enjoy it!
This coffee comes from PT Toarco, a Japanese-Indonesian export company. They participate in the education and support of their producing partners. Currently, the company offers annual courses for producers to receive their identity cards, but it hopes to expand its training opportunities to twice a year and include such things as cherry selection, planting and harvesting techniques, and fermentation. They also organize a party at the end of the harvest cycle and give producers prizes such as pulpers and other necessary tools. Approximately 150 to 200 producers participate in this celebration each year.
It is rather rare to taste a Sulawesi coffee that has been washed and treated with care and respect. The people at Toarco are experienced. They want to change the image of Indonesian coffees.
Most of the coffee produced in Toraja is of the S795 variety, developed in India to resist leaf rust. It is an exotic cultivar, which is not often seen. Toarco is meticulous in sorting the beans and our lot comes from small producers in the higher regions.
We love to explore cultivars off-trail to add discovery to our cup.
Toarco is a coffee that is very sensitive to roasting, even fragile. Because there is almost no acidity in the bean, the sweetness and freshness is developed, very gently, by roasting at low temperature.
In general Indonesian coffees are too burnt. They are often ignored by coffee geeks, because they have been treated less well in roasting. We bet you'll like our version!
We suggest extracting it in Chemex to surprise a coffee geek, or filter it to destabilize the family at Sunday brunch.
