From dried fruits to tropical fruits with floral and citrus undertones throughout, this complex coffee takes you on a journey to another time and place. This filter coffee is a great introduction to this lesser known origin. It is a rare and unique Grade AA coffee of the Udaini varietal from the Hayma community in Sana'a, Yemen purchased via Direct Trade by our green coffee organization WE THE ORIGIN, directly from Yemeni coffee producer Sabcomeed. The Hayma community is a collective of small farmers, some of whom produce as little as 5 kg of coffee in an entire season. They maintain their farms at 2300 meters above sea level and combine their harvest to produce the Hayma community lot. By combining their efforts, they produced only 100 kg of coffee this season, making this an extremely rare nano-lot.
Post-harvest, the coffee was processed anaerobically (100 hours cherry anaerobic fermentation, 18 hours parchment anaerobic fermentation).
