    Hand picked, mature cherries are sorted with floating techniques. Cherries are placed in sealed tanks to undergo 7 days of anaerobic fermentation. They are placed on raised beds for a short aerobic ferment while moisture levels drop and dry for 2 weeks before milling.

Funky

This is the wildest and funkiest coffee I've ever tried. The fermenty flavour is intense, and the aroma is so strong its a bit heady. I'd describe it as anaerobic turned up to 11.
