At a whopping 2100m of elevation, Finca San Francisco in Nariño is owned and operated by Diego Lopez. Before he became a farmer, Diego was an agronomist, and he actually bought his farm to apply his knowledge of agronomy. The entire vision for the farm is sustainable development and pest resistance, its why he plants his Caturra below a dense canopy of lemon, guava and banana trees. He’s also experimented with fermentation techniques, and the result is this outstanding yellow honey. Through continuous experimentation, Diego has mastered the open air sun-drying technique, which is the secret to this coffee.

This coffee is fluffy and sweet, reminding us of a vanilla cake with fresh strawberries. The high altitude makes for a bright, fruity acidity, but the extra fermentation in the honey process gives the coffee its honey sweetness, vanilla notes and soft body. This is the perfect coffee for spring as the days are getting longer, the trees are in full bloom, and coffee is best enjoyed over ice out on a sunny patio.
