ABOUT THE NORMAN CANAR MANCHABAJOY, FILTER
At 28 years old, Norman Cañar Manchabajoy has been cultivating coffee on his El Castillo farm for 6 years now and is one of the youngest producers we have the chance to work with. His one acre plot is set at over 1900 meters in the municipality of La Florida in the mountainous region of Nariño. La Florida is one of the 6 municipalities surrounding the crater of the Galeras volcano.
Norman lives with his father Juanito who was himself a coffee grower. He cultivates his Castillo trees on a slope in the shade of banana trees, mandarin trees and pacays. He likes this variety for its resistance to the coffee leaf rust disease as well as for its good productivity. Once the cherries are harvested, he brings them to the family home for the depulping and a 15 hours fermentation. The parchment coffee is then rinsed 3 or 4 times and dried on patios.
This coffee is back on our menu for the second time and again presents a beautiful malic acidity reminiscent of green apple as well as panela and milk chocolate sweetness. A juicy and approachable cup that everyone will love!
