How do you follow up on Ismel Hassen's wonderfully juicy and immaculately clean naturally-processed coffee? You find one with an equally big berry burst and similar eat-over-the-sink melon juiciness. However, sourcing well means more than just playing the hits and Bekele Belacho's brings a lot of very unique and individual flavour notes in the cup. Over the strawberry and watermelon acidity, there is a silky and almost cool cream note, think vanilla ice cream or thick table cream. The cup's finish is surprising and unexpected with a spicy peppercorn punch. It all comes together like a pink peppercorn panna cotta.
When sourcing, I always aim for individual producers or separated lots over larger cooperatives, so I was very excited to learn about the Belacho family farm. Bekele along with his wife and six children, grow amazingly sweet 74158 and 74110 varietals in the Bensa Woreda. This is the second year exporting direct from farm and hope this is the first of many years that it appears on our menu. At the farm, coffee dries with cherry intact for 16-18 days before primary milling.
