PROCESS: Washed, dry fermentation 30-38 hoursThree years have already passed since our last arrival from the land of Honduras. This is why we are particularly pleased to present for the first time a superb coffee from producer Israel Ramirez.
Israel is the oldest son of Antonio Ramirez, the patriarch of the Los Ramirez group and a true leader in his community. He started growing coffee in 1990, just 5 years after his father Antonio planted his very first plants in Selguapa. Like many members of the Los Ramirez clan, he started his farm from seeds of the Typica and Bourbon varieties offered by Antonio.
Until 2018, the group of 25 small producers sold their coffee in the form of cherries to local intermediaries, until they took the initiative to process their coffee themselves and produce high-quality microlots for the specialty coffee market. This change of model now allows them to obtain more than 3 times the average local price. This year Israel invested in its drying facilities and its focus on improved fermentation and cooler, slower drying times resulted in a much more complex cup.
Deeply sweet and vibrant, this exceptional coffee surprises with tropical flavors of star fruit and citrus fruits as well as delicious caramelized notes.
