ABOUT THE GABRIEL CASTAÑO, FILTER / FILTER
Don Gabriel Castaño has made a name for himself for popularizing the natural Bourbon rose mutation in the south of the Huila region of Colombia. Unlike most coffees that ripen to a deep red, the cherries in Borbón Rosado turn pinkish. He first planted the variety on his 2 hectare farm called La Granada and thus noticed its marked resistance to coffee rust disease. He then generously propagated his find across the region, donating seeds from his plants to other local coffee growers. The strain expresses itself as a recessive gene, which makes it rather rare and coveted. Gabriel and his wife Carmen have 6 children, 5 of whom they passed on their passion for coffee growing and who now produce coffee themselves.
This 100% pink Bourbon microlot is a washed process with prolonged fermentation. The cherries were first kept intact in closed bags for 96 hours and fermented for another 96 hours in tanks. The parchment coffee was then washed and dried on beds for 15-20 days. The result in the cup is both sweet and delicate with hints of hibiscus, pomegranate, passion fruit and brown sugar.
